Looking for your new favorite easy gluten free cookie recipe? Meet our Cacao Chai cookies. We could tell you that these are Santa’s favorite cookies, but you shouldn’t have to wait until the holidays to break out this recipe. In fact, this easy gluten free cookie recipe could be made just about anytime you’re looking for a delicious boost of energy coupled with a comforting treat. While there truly isn’t an “Ayurvedic” cookie out there, this one comes incredibly close. The ingredients are clean and minimal, and less complicated than your average protein or granola bar. Let’s just not call them cookies at all, they’re happy biscuits.

Cacao Chai cookies

Quick to prep and quick to bake, this easy gluten free cookie recipe is certainly one you can commit to memory. You’ll need almond flour, oats, baking soda, one egg, maple syrup, salt and Farmtrue Cacao Chai Ghee-Nut Butter. This cookie is free of processed, white flour and gluten free because of the nut flour and ghee-nut butter used in its place. While super delicious for spreading on apples, toast, adding to oatmeal bowls (and the list goes on and on…), our ghee-nut butters actually lend incredibly well to baking. Blended nuts with ghee can equate to the essential baking building blocks of flour and butter, but in much better-for-you way. Our special Cacao Chai blend is made with organic cashews, pecans, and peanuts along with our traditional chai spice blend, making us feel all warm and cozy inside! We add pure maple powder and cacao nibs for a delicious crunch then craft it all together with Farmtrue organic ghee grass-feed ghee, making this a creamier, spreadable and more digestible nut butter. How could you go wrong?

This easy gluten free cookie recipe easily doubles (or triples!) and the final results can be stored up to a week, if they aren’t eaten before then.

10 min prep / 10 min cook

Ingredients:
  • 1 cup almond flour
  • 1/4 cup oats
  • Pinch salt
  • 1 egg
  • 1 TBSP maple syrup
  • 1/2 tsp baking soda
  • 1/3 cup Cacao Chai Ghee-Nut butter
  • Maple sugar or turbinado sugar for sprinkling on top

Directions:

1-Preheat oven to 350.

2-Mix almond flour, oats, salt, egg, maple syrup, baking soda and nut butter together.

3-Scoop 1 TBSP mixture and roll into a ball. Place on a parchment lined baking sheet and flatten each ball with your palm slightly. Top with maple sugar or turbinado sugar.

4-Bake for 10 minutes. Remove from the oven and let them cool for a few minutes.
